Honeycomb Pastry with Cheese

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tablespoon dry yeast
  • 1 tablespoon powdered milk
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup plain yogurt
  • 1/2 cup vegetable oil
  • 1/2 cup warm water
  • Filling
  • 1 cup feta cheese or Kiri (or other soft white cheese), mashed
  • 1/4 cup parsley, chopped
  • 1 egg white
  • a small pinch ground cinnamon
  • Topping
  • 1 egg yolk
  • 1/4 cup milk
  • 1/4 teaspoon vinegar
  • sesame seeds and nigella (black cumin) seeds for garnish

Method

Follow the cooking sequence without leaving the page.

  1. In a deep bowl or in a stand mixer, combine all the dry ingredients and mix by hand. Then add the yogurt and oil and mix.
  2. Add the warm water gradually and knead well until you have a cohesive, smooth dough.
  3. Cover the dough with plastic wrap and let it rest for about 30 minutes.
    Timers: 30 min
  4. After resting, divide the dough into medium-sized balls. Mash the cheese and mix the filling ingredients well.
  5. Fill each dough ball with filling, seal to form a smooth ball, and arrange them next to each other in a baking tray lightly greased with oil.
  6. Brush the tops with the egg yolk, vinegar and milk mixture using a pastry brush to give a shine and help browning.
  7. Sprinkle with sesame and nigella seeds.
  8. Bake in a preheated oven (top and bottom heat) at 200°C (392°F) for about 12 minutes or until the honeycomb pastry turns golden.
    Timers: 12 min
  9. Serve the honeycomb pastry warm; it can also be served at room temperature.
