Ingredients

  • 1 kg sifted flour
  • Fresh green wild zaatar (thyme)
  • 1/2 cup olive oil
  • 1/2 cup vegetable oil
  • 2 tbsp yeast
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 4 tbsp milk powder
  • Warm water as needed

Method

  1. Mix the dry ingredients, then add the oils and rub them into the flour mixture.
  2. Add warm water gradually and knead until you have a smooth, soft dough that does not stick to your hands.
  3. Knead for 10 minutes, then cover and let it rise.
    Timers: 10 min
  4. Shape the wild zaatar bread as desired, place the dough on an oiled baking tray, and let it rest again for about 15 minutes.
    Timers: 15 min
  5. Place the tray in a preheated oven at 180°C (356°F) on the middle rack.
  6. When the bread is baked, brown the top under the grill if needed.
