Ingredients
Start here, then move straight into the method.
- 5 cups flour
- 2 cups liquid milk
- 4 tablespoons sugar
- 3 tablespoons yogurt
- 1 tablespoon yeast
- 1 teaspoon baking powder
- 1 tablespoon vinegar
- 2 tablespoons butter
- A pinch of salt
- 1 egg for brushing the samoon
- or
- 1/2 cup liquid milk + 1 teaspoon Nescafe
Method
Follow the cooking sequence without leaving the page.
- Warm the milk slightly. Then place the lukewarm milk with the yeast, sugar, butter, egg, sugar, vinegar, and yogurt in a bowl and whisk together.
- Add the baking powder and 4 cups of flour, then knead. If the dough needs more flour, add the fifth cup gradually and knead. Stop adding flour when you get a soft dough that sticks slightly to the hand, so it does not become too stiff.
- Wrap the dough in plastic wrap, then cover it with a clean towel and let it rise for an hour or more.
- Shape it into balls of the desired size, then roll each ball after sprinkling the surface with a little flour and shape it into a cylindrical or round form as desired.
- Place the samoon dough pieces on a tray lightly greased with oil, leaving space between them so they do not stick together as they rise.
- Cover the dough with a cloth and let it rise again until its size doubles. The more the dough rises, the better.
- Brush the top of the samoon with the milk and Nescafe mixture or the beaten egg, then place the tray in a hot oven on the middle rack at 220°C. Turn on the oven from the bottom only for the first 10 minutes, then switch to top and bottom heat until the samoon is cooked. It will need about 20 minutes.Timers: 10 min, 20 min
