Beirut-style daouqieh dessert made the traditional way... and it could not be easier! We hope you try it

Ingredients

  • 1 cup ground pistachios
  • 3 tablespoons powdered sugar
  • 2 tablespoons fine semolina, maizena-style flour
  • 1 teaspoon butter
  • Rose water and orange blossom water for kneading
  • Custard filling:
  • 2 liters milk
  • A very small cup of lemon juice or 1/4 cup
  • 2 tablespoons yogurt
  • 2 containers of ready-made clotted cream or 1 container mascarpone cheese
  • First prepare the custard... Place the milk in a pot over the heat
  • Daouqieh:

Method

  1. When it is warm, add the lemon juice and yogurt and stir
  2. Let it simmer for a little while over low heat until the milk curdles and the curds form
  3. Strain the milk to obtain the curds and leave them in the strainer long enough to get rid of all the water
  4. Mix the curds you obtained with the container of clotted cream or mascarpone well
  5. Leave the custard in the refrigerator to cool completely before using
  6. When the custard has cooled, divide the daouqieh dough into two parts..
  7. Roll out the first part in a suitable tray... then spread the custard evenly, and finally roll out the second part of the dough on top

  9. Prepare the daouqieh as well... Knead or mix all the daouqieh ingredients and leave in the refrigerator until ready to use
