Fried Qatayef Dessert
Fried qatayef is incredibly delicious… here are the batter and syrup instructions. You can fry them in a little butter instead of oil for a lighter touch, and serve the syrup on the side for added lightness.

Fried Qatayef… easy to make desserts and very tasty

Ingredients
- For the batter:
- 2 cups flour
- half cup fine semolina
- 1 teaspoon baking powder
- 3 tablespoons powdered milk
- 3 tablespoons sugar
- 1 medium spoon instant yeast
- 1 tablespoon cornstarch
- 1 coffee-cup orange blossom water
- 3 cups water
- For the filling and serving:
- walnuts or pistachios
- sugar syrup or shireh
Method
- Blend the batter ingredients together in an electric blender and let the batter rest for one hour.
- In a hot Tefal or nonstick pan, pour one tablespoon of the qatayef batter. Let it cook until small bubbles appear on the surface and the bottom is slightly browned. Repeat until the batter is finished.
- Place the qatayef pancakes on a cloth for about ten minutes to rest.
- Stuff the qatayef as desired, then deep-fry them in hot oil and immediately dip them into the syrup while still hot.
- Lift them from the syrup, let them drain briefly, and serve.
- How to make the syrup:
- Place 2 cups sugar with 1 cup water and a squeeze of lemon in a saucepan over the heat.
- Let the syrup boil until it thickens slightly.
