Othmaliyyeh is one of the most delicious Arabic sweets.. and there is no doubt that making it at home is more economical, more blessed, and tastier too with this easy recipe

Ingredients

  • Othmaliyyeh dough
  • 1 cup oil, or mix oil and ghee
  • Ashta Qaymar:
  • 3 cups liquid milk
  • 1 cup liquid cream for desserts
  • 1/2 cup flour
  • 3 tablespoons chicken flour or fine semolina
  • 1 tablespoon orange blossom water
  • 1 can ready-made qaymar ashta
  • syrup for serving
  • pistachios for garnish
  • Syrup
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • Syrup:

Method

  1. We separate the Othmaliyyeh dough from each other... and divide it into two parts to make two Othmaliyyeh discs
  2. Place the first part in a round tray, or as desired, and spread it over the bottom of the tray, then add 1 cup oil or oil with ghee on top of it
  3. Bake it in a hot oven at 200°C, watching it carefully so it does not burn... turn the tray as needed
  4. When the dough turns golden, remove it from the oven and place it on parchment paper... then bake the second part the same way... use only the oil already in the tray and do not add more... it can also be baked on the stovetop
  5. Cover the Othmaliyyeh discs with parchment paper to keep them crisp
  6. Meanwhile, prepare the ashta... in a pot over the heat... mix the milk, cream, all-purpose flour, and chicken flour, and stir them while cold
  7. When the mixture thickens, remove it from the heat and add the orange blossom water, then mix
  8. After the cooked ashta cools to room temperature, add the qaymar on top and mix
  9. Put the ashta in the fridge to chill well
  10. Spread the ashta between the two Othmaliyyeh discs, garnish with pistachios, and serve with syrup
  11. Put the sugar, water, and lemon juice in a pot over the heat without stirring
  12. Let it boil for 8 minutes
    Timers: 8 min
  13. Add the orange blossom water, turn off the heat, and stir
  14. Serve the syrup cold with the Othmaliyyeh
