Carrot dessert... very delicious. This chilled dessert consists of two layers: one of cooked carrots and one of ashta. Here is the authentic way to make it, and you will definitely love it.

Authentic carrot dessert with ashta..
Ingredients
- First layer:
- 1 kilo carrots
- 2 cups sugar
- 1/2 cup water
- 1 tablespoon orange blossom water
- Second layer:
- 1 cup flour
- or
- cornstarch, as desired
- 2 cups powdered milk
- 1/2 cup sugar
- 4 cups water
- 2 tablespoons orange blossom water
- 1 container ashta or clotted cream, 170 g, banana-, honey-flavored, or as desired

Method
- Start the first layer: peel the carrots and coarsely grate them
- Add the sugar and water to the grated carrots, place them in a pot over low heat, cover and cook, stirring occasionally; it takes about 1 to 1 1/4 hoursTimers: 240 min
- When it is cooked and turns a darker color, add orange blossom water, stir briefly, then remove from the heat
- Pour it into a tray or into cups according to preference and leave it to cool
- Start the second layer: mix the flour, milk, sugar and water and put them on the heat, stirring continuously
- When the mixture thickens, add orange blossom water, stir and remove it from the heat
- Add a can of ready-made ashta (clotted cream) to the mixture and mix well
- Pour the second layer over the carrots
- Let the dessert cool, then refrigerate it
- Garnish the carrot-ashta dessert with ground or whole pistachios and a little cooked carrot if desired, and serve cold
- Note: the carrot layer should not be hard when serving
