Meanwhile prepare the syrup (shīrah) on plastic wrap; the syrup should be at room temperature...

Put a little syrup on your hand and roll out the dough using a second sheet of plastic wrap also sprinkled with syrup. Roll the dough with a rolling pin over the second sheet of plastic so the dough becomes sandwiched between two sheets...

Spread the clotted cream on the dough, roll it into a log, cut as desired and then garnish with Halabi pistachios and lemon blossom jam
