Classic Chicken Rice
A much-loved rice dish: rice cooked with ground meat, chicken cooking stock and warm spices, topped with boiled chicken and fried nuts. Delicious served with yogurt or salad.

Ingredients
Start here, then move straight into the method.
- 3 cups basmati rice
- 1 large onion, diced
- 300 grams finely ground meat (as written)
- 2 tablespoons ground sweet spice (baharat)
- 2 tablespoons ground cinnamon
- 1 tablespoon black pepper
- 1 medium spoon ground cardamom (as written)
- Assorted fried nuts or garnishes
- Boiled chicken

Method
Follow the cooking sequence without leaving the page.
- First, fry the assorted giblets to your preference. Fry them in a little vegetable oil and set them aside.
- In a pot, sauté the onion in a little oil until it softens well, then add the ground meat and cook, stirring, until done.
- Add the spices, salt, and chicken cooking stock at a rate of 1½ to 2 cups of stock per cup of rice, depending on the type of rice.
- Let them boil for 10 minutes, then add the rice and stir gently so the rice grains do not break.Timers: 10 min
- When the water reaches the level of the rice, reduce the heat, cover the pot, and cook for about 20 minutes until the rice is cooked.Timers: 20 min
- Transfer the rice to a serving dish and arrange the boiled chicken and giblets on top.
