  • 1 cup pistachios mixed with syrup
  • 1 cup fine semolina
  • 6 cups milk
  • 3 tablespoons sugar
  • 1 tablespoon cornstarch
  • A pinch of mahleb
  • 1 teaspoon rose water
  • Shredded coconut
  • Pistachios for garnish
  • Qamar cream *
  • Syrup *
  • How to make syrup:
  • 2 cups sugar
  • 1 cup water
  • Juice of half a lemon
  • Ingredients and method for the cream:
  • 2 liters milk
  • Half a cup white vinegar
  • 1 cup powdered milk
  • A small can of ready-made Qamar cream

Method

  1. Place the pistachios mixed with syrup in a deep dish suitable for serving the dessert. Set aside.
  2. In a small pot over heat, mix the remaining ingredients well. When the mixture thickens, pour it over the pistachios and the reserved syrup in the dish.
  3. Chill in the fridge for about 3 hours until well set.

  4. After the allotted time, remove from the fridge and top with the cream (also known as Qamar) then decorate with shredded coconut and a little ground pistachio
  5. Cook the ingredients on the stove for about 5 minutes until the syrup thickens; you can drizzle a few drops of rose water

  6. Warm the milk over low heat... when it warms a little, add the vinegar until the milk curdles.
  7. Strain the mixture and return the pot to the heat with the cornstarch and powdered milk.
  8. Stir well until the mixture thickens and sets.
  9. Then you can add the ready-made Qamar cream as desired.
