Oven Chicken Marinade

This wonderful marinade for oven-roasted chicken will give you an excellent, very delicious result. It is best to prepare the marinade and leave the chicken in it as long as possible before roasting so it soaks up all the flavors.

Ingredients

  • 2 kg bone-in chicken
  • 1 head garlic, minced, about 7 cloves
  • 2 tablespoons red pepper paste *
  • 2 tablespoons tomato sauce
  • 2 tablespoons yogurt
  • 1 piece ginger, grated
  • 1 teaspoon black pepper
  • 1 teaspoon chicken seasoning
  • Juice and zest of 1 orange
  • Juice and zest of 1 lemon
  • 1 medium spoon mustard
  • 1 spoon soy sauce
  • Rosemary leaves
  • A pinch of oregano or wild thyme
  • A pinch of fennel seeds
  • 1 tablespoon vinegar
  • Salt
  • 1/2 cup water

Method

Follow the cooking sequence without leaving the page.

  1. Wash the chicken after cleaning it thoroughly and rub it with salt, lemon, and vinegar.
  2. Mix all the marinade ingredients well and put the chicken in it to absorb the flavors well...
  3. It is preferable to marinate the chicken for at least two hours or overnight before roasting it in the oven...
  4. Preheat the oven to 180°C. Place the chicken pan on the rack just above the middle and cover with the black oven tray. Roast for approximately two hours until the chicken is thoroughly cooked, then brown under and over.
  5. Serve the oven-roasted chicken alongside French fries, pickles, and the delicious homemade garlic sauce *
