  • Large or medium potatoes suitable for roasting
  • A pinch of salt
  • A drizzle of olive oil
  • Mozzarella cheese
  • Black pepper
  • Fresh green parsley for garnish

Method

Follow the cooking sequence without leaving the page.

  1. Peel and wash the potatoes, then cut wide slits across each potato without cutting all the way through to the end, so the potato remains connected. A larger potato makes a better pocket for the cheese after roasting.
  2. If you're short on time, you can roast the potatoes right after slicing, but you can also boil them briefly (half-cooked) and remove them before they are fully tender.
  3. Sprinkle with a pinch of salt and drizzle with olive oil, then place in a preheated hot oven.
  4. After they are done, remove from the oven and sprinkle with mozzarella cheese, black pepper, and finally a touch of parsley for garnish...
