Ingredients

  • 1.5 kg small potatoes
  • 400 g ground meat
  • Salt and spices
  • 1 onion
  • 1 green pepper
  • 2 tablespoons tomato sauce + 1 teaspoon tomato paste for the meat
  • A pinch of ground red pepper (paprika)
  • Fried pine nuts - to taste
  • 1 chicken stock cube
  • Cooked white rice or rice with vermicelli, as desired
  • Or saffron rice *
  • 2 cups water for the sauce
  • A sprinkle of sumac
  • You can also add a little sumac to give the recipe a tangy flavor

Method

  1. First, peel the potatoes and wash them, then hollow them out from the inside into a boat shape as shown in the picture
  2. Wash the potatoes again and fry them in plenty of hot oil
  3. Drain the potatoes from the oil and sprinkle a little salt over them
  4. Prepare the minced meat filling by sautéing it in a little vegetable oil. When it starts to brown slightly, add the onion cut into small cubes
  5. Add the green pepper, diced into small cubes, and stir with a little salt, spices, and paprika
  6. You can also add a little sumac to give the recipe a tangy flavor
  7. Add the tomato paste, stir the mixture, cover the pot, and let the ingredients cook for a little while
  8. Fill the potato boats with the meat mixture and, if desired, add fried pine nuts
  9. Arrange the stuffed potatoes with ground meat in an ovenproof dish
  10. Meanwhile, prepare the sauce for the recipe by mixing 2 tablespoons tomato paste, 2 cups water, salt, and black pepper to taste, then add the chicken bouillon cube
  11. Simmer the potatoes with the sauce over medium heat for 15 minutes until it thickens slightly

  12. Serve the stuffed potato boats with cooked rice or saffron rice as desired
