Ingredients

  • Potatoes
  • Fresh coriander
  • Dried coriander
  • Garlic
  • Lemon juice
  • Paprika
  • Salt
  • Oil

Method

Follow the cooking sequence without leaving the page.

  1. Peel the potatoes, wash them, then cut them into small or medium cubes
  2. Fry them in plenty of hot oil until crispy
  3. In a wide pan, sauté the crushed garlic in olive oil until softened, then add the finely chopped fresh coriander and stir briefly until it wilts
  4. Add the fried potato cubes over the garlic and coriander after removing them from the frying oil and stir
  5. Sprinkle with dried coriander, paprika, lemon juice (amount to taste), salt, and a small splash of water, then stir
  6. Finally, add an extra sprinkle of fresh coriander and stir for one minute, then turn off the heat
  7. Serve batata hara immediately or cold
