Method

- Cut the potatoes into medium-to-small cubes
- Fry the potatoes in plenty of hot oil until cooked through
- Crush the garlic with a pinch of salt and put it in a pan
- Sauté the garlic in olive oil for just 2 minutes over medium heat, then add the fried potatoesTimers: 2 min
- Toss the potatoes and garlic for 2 minutes, then add coarsely chopped cilantro and cook for another 2 minutes
- Sprinkle a little salt and lemon juice, toss to combine, then turn off the heat immediately
