Monk's Eggplant

Ingredients

- One medium eggplant
- Two small onions
- One garlic clove
- 4 small red sweet peppers
- 4 small green sweet peppers
- Two ripe tomatoes
- Fresh cilantro (coriander)
- Juice of a lemon
- Pinch of salt
- Olive oil
Method
Follow the cooking sequence without leaving the page.
- Prick the eggplant in several places with a fork or a thin knife, then roast it in the oven or over a flame (on the grill or directly on a gas burner).
- Scoop out the flesh with a spoon and place it in a bowl.
