Kofta with Tahini
Have you tried making kofta with tahini, or do you prefer the traditional version with potatoes and tomato sauce? Variety is always good and may be especially welcome for the family and children :)
Ingredients
Start here, then move straight into the method.
- 1 kilo finely ground red meat
- 1 bunch parsley
- 2 dry onions (one for the meat to make the kofta, and the second to place in the tray with the meat and potatoes)
- 3 medium potatoes
- Salt and spices
- Sauce
- Tahini, lemon, bo'osfeir, salt, water, black pepper.

Method
Follow the cooking sequence without leaving the page.
- We start preparing the kofta meat by mixing the finely ground meat with the finely chopped parsley, the finely chopped onion, the spices, and the salt. Shape the kofta into patties, then grill them with a little vegetable oil along with a few potato slices and an onion cut into slices as well.
- Put the tahini, water, lemon juice, and a little bo'osfeir juice (bo'osfeir is a fruit similar to sour lemon), along with salt and black pepper, in a jar... Close the jar tightly and shake it well until the ingredients are well combined and you get a sauce to pour over the kofta. Then place the kofta tray in the oven for about a quarter of an hour....
- Note: When juicing the bo'osfeir, it is better to squeeze it only once, because squeezing it too hard will bring out its bitter taste.
