Ingredients
- Cauliflower, washed and cut into medium florets
- Batter:
- Plain yogurt
- 1 egg
- 1 cup all-purpose flour
- 2 garlic cloves, minced
- Salt
- Black pepper
- Ground cumin
- Dried coriander
Method
- Cut the cauliflower into medium florets. Wash them, then blanch in boiling water for 3 minutes only so they don’t fully cook — this removes the strong smell and leaves them half-cooked.Timers: 3 min
- In a bowl, whisk together the yogurt, egg, flour, garlic, salt and spices. Then coat the florets in this batter and let them sit for just 5 minutes.Timers: 5 min
- In a frying pan, add a little oil and heat it. This helps prevent the florets from absorbing too much oil when frying.
- Fry the cauliflower on all sides until golden brown.
- Transfer to a sieve or a paper towel–lined plate to drain excess oil, then serve immediately while hot.
