Spicy stuffed large fish is one of the easiest fish dishes at all, especially if we want to grill it. The important thing is that the fish is cleaned well, and the rest is easy.

- One large fish, any type you prefer
- Stuffing:
- Finely chopped fresh cilantro
- Minced garlic
- Finely chopped hot pepper
- Walnuts
- Tahini sauce:
- Tahini
- Lemon juice
- Water
- A sprinkle of parsley
- A little of the prepared stuffing

Method
- After thoroughly cleaning the fish and letting it drain, grill or pan-fry the whole fish just a little — about half-cooked or half-fried only.
- Prepare the stuffing: roughly chop the cilantro and lightly crush the garlic with the hot pepper and walnuts so they remain slightly coarse, then mix them with the cilantro.
- Stuff the lightly grilled fish with the stuffing, leaving a little of the mixture aside to add on top of the tahini sauce.
- Prepare the sauce: put a measure of tahini in a bowl and add roughly the same amount of water, whisking to prevent lumps. Add salt and lemon to taste, a sprinkle of parsley, and a little of the previously prepared stuffing, then mix.
- Place the stuffed fish in a baking dish and cover it with the sauce you prepared.
- Bake or roast until cooked through, taking care not to overcook so it doesn't dry out.
- Serve the fish immediately after removing it from the oven and garnish as desired.
