Zalabia

Zalabia made at home, with an especially delicious touch of anise! You can serve it for breakfast with labneh, for example, or turn it into a sweet treat by dipping it in sugar or syrup.

Zalabia is both a savory and sweet recipe at the same time! How? That depends on how you serve it.

Ingredients

Start here, then move straight into the method.

  • 1 teaspoon anise
  • 2 cups sugar
  • 1 kilo flour + 1 cup
  • A pinch of ka'k spice
  • 1 cup liquid milk
  • 1 cup sesame seeds
  • 1 tablespoon yeast
  • Warm water as needed

Method

Follow the cooking sequence without leaving the page.

  1. Mix all the ingredients together, then add the water gradually and knead for at least 10 minutes until the dough comes together and becomes soft.
    Timers: 10 min
  2. Set it aside to rise well for at least an hour; it can also be left overnight.
  3. Heat plenty of oil, take pieces of dough, shape them lengthwise by hand, and place each piece directly into the oil after shaping.
  4. Fry until golden, then remove from the oil.
  5. Serve immediately with sugar, syrup, or shira, or with labneh and cheese as desired.
  6. Fafi nohmn tahini
