Basbousa with Cream (Qashta)

Ingredients

Start here, then move straight into the method.

  • 1 cup fine flour
  • 1/2 cup sugar
  • 1/2 cup plain yogurt
  • 1/2 cup powdered milk
  • 1/2 cup vegetable oil
  • 1 teaspoon baking powder
  • Vanilla
  • 1 egg
  • 1 can qashta (clotted cream)
  • Syrup (atar/shaera)
  • Syrup
  • 1 cup sugar
  • 1 cup water
  • Juice of half a lemon
  • A splash of rose water and orange blossom water
  • Nuts for garnish

Method

Follow the cooking sequence without leaving the page.

  1. First, prepare the syrup: dissolve 1 cup sugar in water in a saucepan over the heat until it boils. Then reduce the heat and add a squeeze of lemon. Let it boil for about 12 minutes.

  2. Turn off the heat, add orange blossom water and rose water, and set the syrup aside.
  3. Prepare the basbousa batter: mix the dry ingredients first, then in another bowl whisk the egg with the sugar and vanilla well.
  4. Pour the oil over the egg mixture and whisk, then add the yogurt and whisk.
  5. Then add the dry ingredients in batches and stir.
  6. Pour the basbousa-with-cream batter into a pan greased with oil and dusted with flour, and spread the mixture evenly.
  7. Take the qashta (cream) and distribute it over the surface of the batter as you like — see photo.
  8. Place it in the oven on the second rack at 200°C; after 10 minutes lower the temperature to 180°C.

  9. When the basbousa with cream is done, pour the reserved syrup over it and garnish with nuts as desired.
  10. Let it cool and serve.
