Ingredients

  • 1 kilo shrimp
  • 2 kilos Indian basmati rice
  • Paprika
  • Oregano
  • Salt
  • Fish spice
  • Rice spice
  • Black pepper
  • Allspice
  • 1 large onion
  • 2 cloves garlic
  • 3 carrots
  • Green onion
  • Tomato sauce
  • Peas
  • Butter
  • Chicken stock cube
  • About 1 kilo fish fillet (optional)

Method

  1. Fry the cleaned, peeled shrimp with a sprinkle of fish spice, paprika, oregano, and salt in butter over high heat until the shrimp changes color and cooks through, for just a few minutes, then set aside
  2. Also toss the fish fillet in butter with fish spice and salt only until cooked through
  3. In the same pot or saucepan, sauté the finely chopped onion and minced garlic in a little oil until softened
  4. Add the chopped or grated carrots and chopped green onion, adjust the salt, then add the chicken stock cube, a sprinkle of fish spice, black pepper, rice spice, paprika, and allspice, and stir
  5. Add plenty of tomato sauce and stir, then add water at a ratio of two cups of water for each cup of rice, along with the peas, and cover the pot
  6. When the water comes to a boil, add the washed and drained rice and stir, then wait until the water level drops to the level of the rice before lowering the heat and covering the pot for about 20 minutes or until the rice is cooked

  7. Serve the rice with vegetables, arrange the shrimp and fish fillet on top, and present
