Ingredients

  • 1 cup coarse semolina
  • 1 cup fine semolina
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 tsp yeast
  • 1 tsp mahlab
  • Rose water and orange blossom water for kneading (as needed, depending on the semolina)
  • Syrup for the top
  • Cooked ashta
  • 1 liter milk
  • 3 tbsp starch
  • 1 tbsp flour
  • 2 tbsp sugar
  • 1 tsp rose water and 1 tsp orange blossom water
  • Ashta

Method

Follow the cooking sequence without leaving the page.

  1. Rub the semolina with the butter (at room temperature) and set aside for 1 hour.
    Timers: 60 min
  2. After 1 hour, add the rest of the dough ingredients and mix, then knead with rose water and orange blossom water until you get a soft dough that is not stiff at all (like sand moistened with water).
  3. Divide the dough into two portions.
  4. Spread the first portion evenly in a suitable baking tray or Pyrex dish, then spread the cooked ashta over it at room temperature.
  5. Roll out the second portion of the maamoul mad dough on a piece of kitchen plastic wrap so it is easier to place it over the ashta layer, then smooth the surface of the second layer.
  6. Bake in a 180°C oven until browned on both sides.
  7. Turn off the heat, remove the tray from the oven, and brush the top with syrup at room temperature.
  8. Wait until the maamoul mad with ashta cools before slicing and serving.
  9. Mix the ingredients while cold.
  10. Place over heat and stir until the ashta thickens.
  11. Add the rose water and orange blossom water, stir, then turn off the heat.
  12. Let the ashta cool to room temperature.
