  • 2 cups chicken flour
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 tablespoons milk powder
  • 1 tablespoon yellow spice - turmeric
  • 1 tablespoon baking powder
  • 1 cup vegetable oil
  • 2 cups water

Method

  1. Whisk all the safouf ingredients together until you have a smooth, homogeneous batter.
  2. Grease an oven pan lightly with tahini, pour the safouf batter into it, and let it rest for about half an hour.
  3. Place the safouf pan in the oven at 180°C for about 40 minutes, then brown the top.

  4. Once the safouf is cooked and the top is browned, remove it from the oven, brush the surface with syrup (qatr), let it cool, then cut it to taste.
