The Easiest Way to Make Pistachio Madlouka
The easiest and tastiest way to make pistachio madlouka at home. Madlouka is one of the popular sweets enjoyed during the holy month of Ramadan, but that does not mean it cannot be made for any occasion when you want to impress family and guests.

- 1 1/2 cups sugar
- 3 cups water
- 1 1/2 cups fine semolina
- 1 medium piece of butter
- 1 cup ground pistachios
- Ready-made or homemade ashta or clotted cream*
- Nuts for garnish
- Sugar syrup, as desired
Method
- Place the sugar over heat until it turns golden. It is best not to over-caramelize the sugar so it does not become bitter.
- Add the water and stir the sugar slowly. The sugar will gradually dissolve with the heat...
- Once the sugar has completely dissolved, add the fine semolina and stir the mixture, then add a small block of butter, about a small tea cup, and leave the mixture over the heat for about 5 minutes until the semolina is cooked. Finally, add the cup of ground pistachios...Timers: 5 min
- Remove the mixture from the heat and pour it into a wide serving dish, shape it as desired, and place it in the refrigerator.
- When the madlouka has cooled, top it with ashta or clotted cream, homemade or ready-made, and garnish the madlouka and cream with nuts as desired. You can also add sugar syrup, as desired.
