Quickest Chicken and Vegetables in the Oven

Ingredients
Start here, then move straight into the method.
- 1 kilo chicken thighs or breasts
- 2 potatoes, cut into cubes
- 2 carrots, sliced
- 1 can mushrooms
- corn
- tomatoes
- white pepper
- Chinese seven-spice
- chicken seasoning
- curry powder
- paprika
- garlic powder
- 7 cloves garlic, crushed or minced
- juice of 1 lemon
- 1/4 cup vinegar
- 2 tablespoons oil
Method
Follow the cooking sequence without leaving the page.
- Wash the chicken well, then drain it
- Arrange the chicken in a baking tray and place the vegetables beside it
- Sprinkle with salt to taste and a pinch of each spice, then gently mix all the ingredients together
- In a bowl... crush the garlic, then add the lemon juice, vinegar, and oil, and stir
- Pour the mixture over the chicken and vegetables in the tray
- Cover the tray with aluminum foil and place it in the oven over medium to low heat until the ingredients are cooked through
- Serve the chicken and vegetables in the oven immediately with rice and salad, or as desired
