Vegetable Curry Rice
Vegetable curry rice is a hearty dish that can be served on its own with a salad or alongside kebabs or grilled chicken. Enjoy!
Vegetable curry rice — delicious on its own or served alongside various grilled dishes, especially chicken.
Ingredients
Start here, then move straight into the method.
- 2 cups long-grain rice
- 3 cups water
- 1/3 cup vegetable oil
- 1 teaspoon butter
- A pinch of salt
- 1 carrot
- 1 sweet red bell pepper
- 1 onion
- Leek
- 1 teaspoon curry powder
- 1 teaspoon sweet red pepper powder or paprika
- 1 teaspoon turmeric (or other yellow spice)
- Any nuts, halved, for garnish
- Pat of butter — optional

Method
Follow the cooking sequence without leaving the page.
- In a pot over heat, add the vegetable oil and sauté the sliced onion with the bell pepper cut into large cubes, leeks sliced lengthwise, and carrots coarsely grated using a potato peeler (so the vegetables do not disintegrate from the heat)...
- After the vegetables soften, add the previously washed and drained rice with a pinch of salt and stir briefly...
- Add water according to the type of rice (approximately 1½ cups of water for every 1 cup of rice)...
- Add 1 teaspoon each of turmeric, paprika and curry, plus a small piece of butter to add shine, flavor and a wonderful texture to the rice, and stir...
- When the water boils, reduce the heat well and cover the pot until the vegetable curry rice is cooked...
- Fry the nuts in a little oil and sprinkle them over the rice after transferring it to the serving plate
