Ingredients:

1 1/2 cups semolina

1 cup chickpea flour 1/4 cup vegetable oil 1 teaspoon yeast 1 teaspoon ground anise 1/2 teaspoon baking powder 1/2 teaspoon mahleb 1/4 cup water

Method:

Mix all ingredients and knead well until you get a cohesive dough. Add water as needed for the dough.

Shape the dough into small balls. Pass the balls through a plastic sieve and roll them into finger shapes.

Let Zeinab fingers rest for about half an hour. Pour plenty of vegetable oil into a deep pot and fry the fingers until golden brown.

Remove the fried Zeinab fingers from the hot oil and dip them immediately into syrup.

Syrup ingredients and method:

2 cups sugar

2 cups water

1 tablespoon lemon juice

1 tablespoon rosewater
