Musakhan Chicken with Saj Bread or Tortilla

Ingredients

  • 4 boneless chicken breasts, boiled
  • 6 large onions cut into wedges
  • 1/4 cup olive oil
  • Nuts of your choice (optional)
  • 1/4 cup sumac
  • Salt, to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried coriander
  • 1/4 teaspoon ground cardamom
  • A pinch of black pepper
  • 1/4 teaspoon sweet paprika
  • Juice of half a lemon
  • Saj bread or tortillas

Method

Follow the cooking sequence without leaving the page.

  1. Fry the thinly sliced onions in olive oil until softened.
  2. Add half of the sumac, the lemon juice, and the nuts to the onions. Cook for about 3 minutes over the heat, stirring.

  3. Add the shredded boiled chicken and then add the remaining lemon juice, remaining sumac, salt, and the spices.
  4. Stir briefly, then remove from the heat and let cool slightly.
  5. Spoon the filling onto pieces of saj bread or tortillas cut into triangles or squares.
  6. Arrange the pieces on a baking tray and brush the tops with olive oil to give them a nice color when baking.
  7. Sprinkle sumac on top as well, then place the tray in a preheated oven at medium heat until the Musakhan is warmed and lightly toasted; brown the tops.
  8. Serve the musakhan immediately while hot.
