Lasagna — one of the most famous Italian dishes. Its reputation is deserved thanks to its richness and deliciousness when prepared the traditional way.

Ingredients:

Lasagna sheets

Grated cheese, as desired

Red sauce / Bolognese:

1 onion, chopped

Minced meat

2 cloves garlic

2 stalks parsley, chopped

2 tomatoes, finely chopped

1 tbsp tomato paste

1 cup water

A pinch of seven-spice blend

A pinch of salt

White sauce / Béchamel:

1 tbsp butter

1 tbsp flour

1 cup milk

1/4 cup grated Kashkaval or any cheese of choice

A pinch of salt

A pinch of white pepper

1 cup cooking cream

Method:

Start with the Bolognese sauce: sauté the finely chopped onion with the minced meat and chopped garlic.
Stir until the meat loses its moisture; then add the parsley and mix.
Add the chopped tomatoes, tomato paste and water.
Sprinkle the spices and salt, and simmer the sauce over medium heat for about 15 minutes, then remove from the heat.
Prepare the béchamel sauce at the same time: in a saucepan, melt the butter and add the flour, stirring quickly to avoid lumps.
Add the milk with the grated cheese and spices and stir.
Let it cook over low heat for about 10 minutes.
Then add the cooking cream, bring to a brief boil and remove from the heat.
Arrange the lasagna in a baking dish or glass Pyrex: place uncooked lasagna sheets at the bottom (no need to boil them).
Spoon a little Bolognese sauce over them, then cover with another layer of lasagna sheets.
Spread a layer of béchamel, then lasagna sheets, then Bolognese, then lasagna, and continue layering until finished — the topmost layer must be béchamel.
Bake the dish in the oven until the lasagna sheets are cooked through.
Finally sprinkle cheese on top and brown under the grill for 5 minutes or until the cheese is colored.
Let the lasagna cool slightly so it sets before slicing and serving.
