Recipe story

Tiger cake... or "leopard" cake... its pattern is distinctive and tempting — impossible to resist!!

Ingredients

  • 4 eggs
  • 1 teaspoon vanilla
  • 2 cups sugar
  • a pinch of salt
  • 1 cup warm milk
  • 1 cup oil
  • For the white batter: 1½ cups sifted flour + 1 teaspoon baking powder
  • For the cocoa batter: 1½ cups flour (reduce by 3 tablespoons) + 3 tablespoons cocoa + 1 teaspoon baking powder

Method

  1. Using an electric mixer, beat the eggs, vanilla, sugar and a pinch of salt until well combined.
  2. Gradually add the warm milk and the oil while continuing to beat.
  3. Divide the batter evenly. To the first portion add 1½ cups sifted flour with 1 teaspoon baking powder and stir.
  4. For the second portion, make it brown: add the sifted flour with the cocoa and 1 teaspoon baking powder and mix to obtain a cocoa batter.
  5. Grease the cake pan with a little butter and dust with flour. Begin by adding a little of the white batter, then a little of the brown batter on top, alternating until all the batter is used.
  6. Use a long wooden skewer to draw the pattern you want on the surface.
  7. Place the pan in an oven preheated to 180°C (350°F). Bake for about 30 minutes (after preheating) or until done — watch as oven performance varies.
    Timers: 30 min
  8. Brown the top of the tiger cake for about 5 minutes only (under the broiler/grill) to finish.
    Timers: 5 min
  9. Serve the tiger cake after it cools to room temperature.
