  • 1 kg pumpkin, steamed
  • 1 kg fine bulgur with a spice mix
  • onion slices
  • spinach
  • pomegranate
  • walnuts
  • sumac
  • black pepper
  • salt
  • pinch of ground hot pepper
  • vegetable oil + olive oil

Method

  1. Fry the onion and spinach and set aside.
  2. Soak the bulgur in a little water and knead well by hand, then add the cooked, mashed pumpkin and mix with the bulgur and knead until you have a dough-like mixture.
  3. Spread a portion of the pumpkin dough on a baking tray; place the spinach-onion mixture seasoned with all the spices on top.
  4. Place the remaining portion of the pumpkin dough over the filling and spread to completely cover the filling.
  5. With a knife, score lines lengthwise and crosswise across the entire tray, just as you would when preparing meat kibbeh in a tray.
  6. Bake in a preheated oven until the pumpkin dough is cooked and browned, about 30 minutes at 160°C.
