Roasted Pumpkin Kibbeh

- 1 kg pumpkin, steamed
- 1 kg fine bulgur with a spice mix
- onion slices
- spinach
- pomegranate
- walnuts
- sumac
- black pepper
- salt
- pinch of ground hot pepper

Method
- Fry the onion and spinach and set aside.
- Soak the bulgur in a little water and knead well by hand, then add the cooked, mashed pumpkin and mix with the bulgur and knead until you have a dough-like mixture.
- Spread a portion of the pumpkin dough on a baking tray; place the spinach-onion mixture seasoned with all the spices on top.
- Place the remaining portion of the pumpkin dough over the filling and spread to completely cover the filling.
- With a knife, score lines lengthwise and crosswise across the entire tray, just as you would when preparing meat kibbeh in a tray.
- Bake in a preheated oven until the pumpkin dough is cooked and browned, about 30 minutes at 160°C.Timers: 30 min
