Ingredients

  • Half a kilo finely minced meat
  • 1/4 cup red vinegar
  • 1 tablespoon dried coriander
  • 1 teaspoon salt
  • 1 teaspoon sweet baharat (allspice blend)
  • 1 teaspoon paprika (ground red pepper)
  • A pinch of ground clove
  • A pinch of ground nutmeg
  • 1 teaspoon sausage spice blend
  • 1 tablespoon pine nuts

Method

  1. For best results use meat with some fat — not completely lean — so the sausages do not turn out dry.
  2. Mix the meat with all the spices. Shape it into medium-length fingers and press a pine nut into the center of each piece.
  3. Wrap each sausage finger individually in kitchen cling film and press well so it takes the desired shape.
  4. Place the sausages in the refrigerator; it is best to prepare the mixture and sausage fingers the night before or a full day ahead of serving so the flavors develop.
