- Half a kilo finely minced meat
- 1/4 cup red vinegar
- 1 tablespoon dried coriander
- 1 teaspoon salt
- 1 teaspoon sweet baharat (allspice blend)
- 1 teaspoon paprika (ground red pepper)
- A pinch of ground clove
- A pinch of ground nutmeg
- 1 teaspoon sausage spice blend
- 1 tablespoon pine nuts
Method
- For best results use meat with some fat — not completely lean — so the sausages do not turn out dry.
- Mix the meat with all the spices. Shape it into medium-length fingers and press a pine nut into the center of each piece.
- Wrap each sausage finger individually in kitchen cling film and press well so it takes the desired shape.
- Place the sausages in the refrigerator; it is best to prepare the mixture and sausage fingers the night before or a full day ahead of serving so the flavors develop.
