This banana cake with raisins is a quick, easy recipe that kids can take to school as a light homemade treat.

Ingredients:

2 eggs

1 teaspoon vanilla

1 cup golden or brown raisins, according to availability and preference

½ cup sugar

½ cup vegetable oil

3 ripe bananas

¼ cup plain yogurt

A pinch of salt

3 cups flour

A small pinch of baking soda

½ teaspoon baking powder

Method:

Before you begin, preheat the oven and soak the raisins in water.
Beat the eggs and vanilla for a few minutes, then gradually add the sugar and oil while continuing to beat.
Mash the ripe bananas and mix them with the yogurt, then add to the egg mixture.
Gradually add the flour, baking soda and baking powder and mix with a wooden spoon.
Add the softened, drained and dried raisins and fold in gently.
Pour the banana cake batter into a greased pan or cake tin (the recipe suggests greasing with a little tahini).
