Ingredients:

1 cup Egyptian rice, cooked and chilled (so the heat doesn't make the tuna spoil)

1 can tuna, well drained of oil

1 small onion, finely chopped

A pinch of grated carrot

A pinch of grated cheddar cheese

For coating

Beaten eggs

Crushed cornflakes

Method:

Mix the cold rice, tuna, and the rest of the ingredients, then knead until you get something like a dough
Shape into small balls
Dip the tuna balls in the beaten eggs, then in the crushed cornflakes
Place the balls in the fridge for a while to chill so they firm up and don't fall apart when frying
Fry them in plenty of hot oil and serve
