Harisa Halva... in its authentic form

Ingredients

  • 2 cups coarse semolina
  • 2 cups sugar
  • 2 cups yogurt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 3 tablespoons ghee (vegetable or animal)
  • Pistachios for garnish, or any nuts of your choice
  • Syrup

Method

  1. In a bowl, mix the ghee, sugar, yogurt, baking powder, and baking soda (bicarbonate) and stir well.
  2. Add the semolina and mix well.
  3. Let the mixture rest for 4 hours.
    Timers: 240 min
  4. Place it in a buttered tray and garnish with pistachios.
  5. Place the tray in the bottom of the oven at 200°C for about twenty minutes or until the edges turn golden.
  6. When the edges are golden, remove the harisa from the oven and cut it, then return it to the oven on the middle rack for about another twenty minutes.
  7. Remove it from the oven and soak it with syrup (qatra).
  8. Serve it once it has cooled.
