How to make eclairs with a recipe we tried to make as detailed as possible to help ensure success when you try it. Eclairs are not difficult, but they do require some precision in preparation. Follow the steps and you will get the tastiest eclair cake!

Ingredients

  • Eclair dough
  • 250 ml water
  • 100 grams butter
  • 200 grams flour
  • 1 tablespoon sugar
  • Pinch of salt
  • A little vanilla sugar
  • 5 eggs
  • Pastry cream:
  • 6 egg yolks
  • Half a cup of sugar (to taste)
  • 6 tablespoons flour
  • 1 tablespoon vanilla sugar
  • 700 milliliters milk
  • 1 teaspoon butter
  • Lemon zest with a squeeze of lemon juice

Method

  1. Put the water, sugar, butter, vanilla and salt in a pot until it comes to a boil and the butter melts.
  2. Add the flour and stir off the heat until you have a ball, then return it to low heat and stir constantly for 3 minutes until the dough dries out.

  3. Remove the eclair dough from the heat and let it cool completely. Add the eggs gradually, stirring with a wooden spoon until each egg is fully incorporated into the dough.
  4. Place the mixture in a piping bag and pipe the eclairs onto a baking tray lined with parchment paper.
  5. Place the tray of eclair cake pieces into a preheated oven at 200 degrees.
  6. Leave the eclair cake pieces in the oven for 20 minutes without opening the oven door so the pieces do not deflate and shrink in size.

  7. After this time, reduce the oven temperature to 150 degrees and leave them for another 10 minutes until the pieces puff up and we have a golden eclair cake.

  8. Turn off the oven and open it slightly, then leave the eclairs for about 5-10 more minutes.
  9. Remove the eclairs from the oven and place them on a wire rack so they do not sweat. When the eclair shells are cool, fill them as desired with pastry cream, chocolate, and cream.
  10. Put the sugar over the egg yolks and stir well until combined. Add the flour and mix all the ingredients until you get a smooth mixture...
  11. Boil the milk with the vanilla over low heat. Remove the milk from the heat when it boils and add the egg, sugar, and flour mixture...
  12. Stir the ingredients well, then return the mixture to medium heat and stir until it thickens and becomes creamy. Remove from the heat and set aside to cool....
