Meat mandi is one of the most famous dishes in Gulf cuisine. You can prepare chicken mandi instead, using either meat or chicken, and serve it with dakkous sauce and tomatoes or whipped yogurt.

Step 1

Place the meat in a deep pot or preferably in a pressure cooker with a pinch of sugar to tenderize the meat, and add cardamom, spices, a dry onion, bay leaves and aromatics as desired.
