Ingredients:

1.5 cups fine semolina

1.5 cups all-purpose flour

1/2 cup powdered sugar

\r\n

3/4 cup ghee or soft butter

\r\n

1/2 cup warm water

\r\n

1 tablespoon instant yeast

\r\n

2 tablespoons yogurt

\r\n

2 tablespoons orange blossom water

\r\n

2 tablespoons rose water

\r\n

Filling:

\r\n

1/2 kg date paste - you can grind regular dates after removing pits

\r\n

100 g soft butter

\r\n

A pinch of cinnamon

\r\n

1 tablespoon orange blossom water

\r\n

1 tablespoon rose water

\r\n

\r\n

Method:

\r\n

Mix all dough ingredients well and set aside until the filling is prepared.

\r\n

Mix the filling ingredients well to form a single soft mass.

\r\n

Roll out half the dough on a sheet without greasing it. Roll out a thin layer; it will puff a little during baking.

\r\n

Spread the date filling, you may roll it smooth, then place the remaining dough over the filling. Also roll the second layer thin and even; you can use damp hands to help spread it.

\r\n

Place the date-filled Maamoul in a preheated oven at 180°C on the middle rack.

\r\n

When the tray browns slightly, switch the oven to top heat to finish baking.

\r\n

Let it cool completely before turning onto a serving plate and slicing as desired…
