- 1 kilo flour
- Half a cup sugar
- A large spoonful of dukkah or kaak spice
- 1 tablespoon yeast
- 1 tablespoon baking powder
- 1 tablespoon anise seeds
- Half a cup sesame
- 1 teaspoon salt
- 1 teaspoon mahlab
- A pinch of nutmeg
- 1 cup vegetable oil
- 1 and a half cups liquid milk
Method
- Mix the dry ingredients in a large bowl, then gradually add the oil and milk while continuously kneading until you have a cohesive dough.
- Leave the dough in a warm place for two hours to ferment and rest. Then shape it into long pieces about two fingers wide and deep-fry them in plenty of oil over high heat until golden.
- You can serve zlabia with sugar syrup (qatār) or shireh as a dessert, or plain as a type of bread or cake alongside labneh and cheese.
