Authentic Baalbek-style safiha made at home from A to Z! Give it a try

Ingredients:

4 cups flour

1 cup lukewarm water

1/2 teaspoon instant yeast

1 egg

1 teaspoon salt

2 tablespoons sugar

3 tablespoons vegetable oil

2 tablespoons yogurt (labneh)

Method:

In a bowl, place the flour and salt and stir briefly.
Make a well in half of the flour mixture and add the yeast, sugar and half of the lukewarm water. Stir lightly, cover and leave 5 minutes for the yeast to activate.
In another small bowl, mix the remaining water with the egg, yogurt and oil, and whisk together.
Add the egg mixture to the dough and begin kneading the two mixtures until you have one soft dough.
Place the dough in a bowl greased with oil, brush the top with oil, cover and let it rise for 1 hour.

Meat filling:

1/2 kg minced meat

1/4 green bell pepper, finely chopped

1/4 red bell pepper, finely chopped

2 teaspoons labneh or yogurt

1 medium onion, finely chopped

1/2 teaspoon ground coriander

1/2 teaspoon paprika or ground red pepper

1/4 teaspoon ground cumin

1/4 teaspoon ground cinnamon

2 teaspoons salt

Method:

Mix all the filling ingredients together, then start shaping the Baalbek safiha.
Divide the dough into balls and roll them out on a flat surface, sprinkling with flour so they don't stick.
Cut the dough into circles, then place about one tablespoon of the meat filling in the center of each circle.
Use your fingertips to pinch the edges of the dough together, bringing the four corners to the center to seal.
Brush a baking tray with a tablespoon of vegetable oil, place the safiha pieces on the tray and bake in a preheated oven at 180°C.
When the safiha turns light golden, remove it from the oven.
