Arugula salad with smoked salmon is a very special homemade recipe that is delicious and will leave you feeling full thanks to the addition of fish.

Ingredients:

1 bunch arugula or rocket Slices of smoked salmon Red onion 1/4 boiled beetroot 1 sweet red pepper Juice of 1/2 lemon 1 tablespoon olive oil Salt A pinch of coarse black pepper Crushed hot pepper, to taste

Preparation method:

Wash the arugula well, drain it, then cut the leaves, if large, into large pieces as well
Peel the boiled beetroot (or use canned) and chop it finely
Slice the onion and red pepper into wedges, meaning thin strips
In a deep bowl, add the oil, lemon juice, and salt and mix, then add the onion, pepper, and beetroot and toss
Finally, add the arugula and mix, then arrange the smoked salmon slices on top and sprinkle with coarse black pepper and crushed hot pepper
Serve the salad immediately so the arugula does not wilt
