Avocado and beet salad — a quick salad you can make when you want something a bit "exotic" or a light dinner without guilt. Enjoy its wonderful flavor and you'll also feel satisfied because it contains avocado! Calories will be the last thing on your mind :)

Ingredients:

Coarsely chopped lettuce Pre-cooked beetroot, sliced (or canned) Avocado, pitted and cut into cubes or slices Grated carrot for garnish Dressing: Garlic Lemon juice Oil (olive oil works well) Salt

Method:

Arrange the chopped lettuce on a serving plate, then place the avocado slices and beet pieces on top.
In a small bowl, mix the dressing ingredients.
Drizzle the dressing over the salad without tossing, garnish with grated carrot or as desired, then serve immediately.
