Apalma zucchini with mixed vegetables in the oven is one of the tastiest zucchini recipes, and a new twist that is different from the traditional stuffed zucchini recipe! Try this wonderful recipe for the most delicious Apalma zucchini!

Ingredients:

1 kilo zucchini

1/2 kilo ground meat

oil for frying

2 cups tomato juice or tomato sauce

1 cup water

3 whole tomatoes

potatoes

seven-spice

pomegranate molasses

1 tablespoon tomato paste

Preparation:

We start by washing the zucchini well, then place it in a colander until it dries.

Put the oil on the heat to fry the zucchini and the whole potatoes.

When the vegetables are done frying, set them aside.

Start preparing the meat... stir the meat well and add the spices, salt, pine nuts, then add 1 tablespoon of pomegranate molasses.

Then we start stuffing the zucchini... using a knife, cut each piece in the middle and fill it with the meat mixture.

Do the same with the potatoes, and also stuff the tomatoes, then arrange them in an oven-safe tray.

Add 2 cups of tomato juice with 1 tablespoon of tomato paste and 1 cup water.

Place the tray of Apalma zucchini with vegetables in the oven until the zucchini and the rest of the vegetables are cooked through.

Serve the Apalma zucchini with vegetables alongside fluffy or plain cooked white rice.
