Zucchini and eggs sauté... a very easy and tasty recipe indeed... suitable for breakfast, lunch, and dinner too...
Ingredients
- 1 kilo zucchini, washed
- vegetable oil
- 1/4 cup olive oil
- 4 cloves garlic, crushed
- salt to taste
- 4 eggs
- 1 hot pepper
- 1 sweet pepper
- cherry tomatoes - optional
- 1/2 teaspoon black pepper
- a pinch of chopped parsley
Method
- Wash the zucchini and trim the stem ends from both sides... then cut the zucchini into medium to large pieces
- Wash the zucchini again and drain well
- Fry the zucchini in plenty of hot oil until cooked through
- In another bowl... add the olive oil and sauté the crushed garlic until softened
- Add the fried zucchini over the garlic and stir briefly
- Beat the eggs separately and add them over the zucchini, then adjust the salt
- At this stage, also add the chopped hot and sweet peppers and the cherry tomatoes
- Cover the zucchini and eggs and leave over low heat for about 7 minutes, or until the eggs are cookedTimers: 7 min
- Remove the zucchini and eggs sauté from the heat and sprinkle the black pepper and parsley on top
