Ingredients

  • 1 kg sifted flour (whole wheat or white)
  • 2 cups sugar (or more to taste)
  • 1 teaspoon ground anise
  • 1 teaspoon whole anise seeds
  • A pinch of ground nutmeg
  • A pinch of ground cloves
  • 1 cup sesame seeds
  • 1 tablespoon instant yeast
  • Warm water as needed (about 3 cups)

Method

  1. Mix the dry ingredients, then gradually add water and knead.
  2. You should get a cohesive but soft dough; oil your hands so the dough doesn’t stick.
  3. Let the zalabia dough rise for about two hours.
  4. Heat plenty of oil. Take small pieces of dough, shape them lengthwise and make a hole in the middle with your finger.
  5. Drop the dough into the oil and fry until golden to brown.
  6. Remove the zalabia from the oil and place on napkins to drain.
  7. Let cool and serve cold.
  8. Serve zalabia at breakfast or dip in sugar or pour syrup over them when serving.
