Za'atar rolls are a delicious pastry recipe, perfect as a snack for kids, for parties and special occasions, and for breakfast too. The best part is that they stay soft and fresh for several days.

Za'atar rolls are a delicious pastry recipe, perfect as a snack for kids, for parties and special occasions, and for breakfast too. The best part is that they won’t dry out or go stale; you can reheat them after a week and enjoy them, as long as they are stored in the refrigerator.

The dough:

1 kilo flour

2 large tablespoons sugar

2 large tablespoons yeast

2 large tablespoons vinegar

A pinch of salt

1/2 cup oil

3 large tablespoons milk powder

2 large tablespoons yogurt

2 cups lukewarm water, or more or less as needed depending on the flour

The filling

1/2 cup olive oil

1 cup za'atar

Ingredients

Start here, then move straight into the method.

  • 1 kilo all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons instant yeast
  • 2 tablespoons vinegar
  • a pinch of salt
  • ½ cup vegetable oil
  • 3 tablespoons powdered milk
  • 2 tablespoons yogurt
  • 2 cups lukewarm water (or as needed for the dough)
  • ½ cup olive oil (for the filling)
  • 1 cup dried za'atar (or to taste for the filling)

Method

Follow the cooking sequence without leaving the page.

  1. We start by preparing the dough: mix all the dry ingredients, then add the vinegar and oil and rub them in.
  2. Next, knead with the lukewarm water until you get a soft dough, then wrap it in plastic wrap and cover it with a cloth.
  3. Let the dough rest for 1 hour, or longer if needed.
    Timers: 60 min
  4. Divide the dough into 2 portions and roll each one out into a thin rectangle, about the thickness of mana'eesh or even thinner.
  5. Brush the rectangle or flatbread with olive oil, sprinkle with a quantity of za'atar, then roll it up and cut into equal pieces about 2 cm thick, or as desired.
  6. Arrange them in a baking tray lightly greased with oil or lined with parchment paper, and let them rest for 1/2 hour to 1 hour as needed.
    Timers: 120 min, 60 min
  7. To bake, brush the tops of the rolls with oil, then place them in a preheated oven, heated from both top and bottom, at 200°C. Put them on the lower rack.
  8. When the za'atar rolls are cooked and golden, remove them from the oven and serve. You can also brush them again with a little olive oil before serving.
