Victoria Cake ... one of the wonderful, famous, and easy English cakes .. lovely

Ingredients

  • Three-quarters cup butter
  • 3 large eggs
  • One-third teaspoon salt
  • 1 and 1/2 cups plain flour
  • Three-quarters tablespoon baking powder
  • Three-quarters cup + 2 tablespoons sugar
  • 1/4 teaspoon almond extract (it gives the cake a strong almond flavor)
  • 1 teaspoon vanilla extract or liquid vanilla (it can be replaced with 1/8 teaspoon vanilla powder, or a pinch, because vanilla powder is more concentrated)
  • Whipped cream, previously whipped and chilled, and raspberry jam for the filling
  • Powdered sugar for decoration

Method

  1. Sift the flour, baking powder, and salt several times, then set aside
  2. Beat the butter and sugar well, then add the eggs (one at a time) gradually over the butter and sugar mixture and beat until well combined
  3. Add the vanilla extract, almond extract, and flour mixture gradually, and mix gently, then divide the batter evenly and place each portion in a cake pan (the two pans should be identical)
  4. Bake the cake pans in a hot oven until done..
  5. Once the pans have cooled.. spread a generous layer of raspberry jam on one cake layer, then spread a thick layer of previously whipped cream (you can use whipped cream powder and whip it as written on the box, or use liquid cream and whip it with a little sugar)
  6. Place the second cake layer on top of the first
  7. Decorate the Victoria Cake with powdered sugar when serving... serve it chilled so it stays firm and cool
