Recipe story

A wonderful Turkish walnut dessert for serving guests that is sure to impress—and the best part is that it is very easy to make. Enjoy it with any hot drink of your choice.

Ingredients

  • 100 g butter
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 2 eggs
  • 1/2 cup coarse semolina
  • 3 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • A pinch of salt
  • A squeeze of lemon juice
  • Filling:
  • 1 cup ground walnuts
  • 2 tbsp shredded coconut
  • Syrup:
  • 3 cups sugar
  • 3 cups water
  • 2 tbsp lemon juice or 1/4 tsp citric acid
  • 1 tbsp rose water
  • Dough:
  • Beat the oil with the butter, then add the yogurt and beat again. Add the eggs and vanilla and continue beating.

Method

  1. First, prepare the syrup so it can cool completely before using it. Place the sugar and water in a pot over the heat until the water begins to boil.
  2. Add the lemon juice and let the syrup boil for 7 to 8 minutes over low heat.
    Timers: 8 min
  3. Add 1 tablespoon of rose water, stir, and turn off the heat.
  4. Add the semolina and stir, then set aside 1/2 cup of the flour and add the remaining flour to the dough along with the baking powder, baking soda, and 1 tablespoon of lemon juice, and mix well.
  5. Bring the dough together without kneading. If it needs more flour, add some of the reserved 1/2 cup gradually. You should end up with a soft dough that does not stick to your hands.
  6. Let the dough rest for just 10 minutes, then shape it into small balls.
    Timers: 10 min
  7. Flatten each ball in the palm of your hand and fill it with the walnut and coconut mixture, then seal and shape as desired.
  8. Arrange the pieces on a baking tray, leaving space between them.
  9. Bake the Turkish walnut dessert on the rack below the middle at 200°C until the pieces take on a beautiful color.
  10. Turn off the bottom heat and turn on the top heat slightly as well. Baking will take about 20 minutes maximum.
    Timers: 20 min
  11. Remove the tray from the oven and pour the cold syrup over the pieces, then turn them several times from time to time so they absorb all the syrup.
