Potato dishes are delicious in all their forms and are often very easy to make. What do you think of kumpir potatoes? Who knows them and who usually makes them? Here is the easy method.

Ingredients

  • 4 medium potatoes
  • 1 medium grated carrot
  • 1 medium onion
  • 3 garlic cloves
  • 1 large tomato
  • 1 medium sweet pepper
  • 1/2 cup corn
  • 1/2 cup mushrooms
  • 1 tablespoon pizza seasoning
  • 1/4 tablespoon black pepper
  • Salt to taste
  • 4 tablespoons oil
  • 1 cup grated mozzarella and kashkaval cheese

Method

  1. Wash the potatoes well. Sprinkle them with salt and rub them with oil, then wrap each potato in a sheet of parchment paper and then in a sheet of aluminum foil.
  2. Bake the potatoes in the oven until cooked through.
  3. Meanwhile, finely chop the onion, then sauté it in a little oil. Add the finely minced garlic and continue stirring.
  4. Add the grated carrot and finely chopped sweet pepper and stir as well, then add the chopped mushrooms, corn, and peeled chopped tomato.
  5. Leave the filling over the heat until the vegetables are cooked.
  6. When the potatoes are done, cut them open in half and use a fork to create a hollow inside each one.
  7. Fill the potatoes with the vegetable mixture and top with the cheese, then return the potatoes to the oven and turn on the broiler from above until the cheese melts and turns lightly golden.
